Jaqueline Auer presented research at ICFD 2026 in Gdańsk

From May 19 to 21, our colleague Jaqueline Auer participated in the 9th International Conference on Food Digestion (ICFD 2026) in Gdańsk, Poland

The conference is an established meeting place for research at the intersection of food, nutrition, and health and brought together more than 700 researchers and experts from academia and industry through the INFOGEST network.

The programme covered current topics such as food structure and digestion, the bioavailability of nutrients, gut microbiota, and advanced models for studying digestion.

During the conference, Jaqueline presented a poster based on her recently published study investigating how different processing methods influence protein digestion and mineral bioavailability in legumes. The results showed, among other things, that fermentation can improve the uptake of important minerals, while other processes increase protein digestibility.

Participating in the conference provided valuable perspectives and contributed to knowledge exchange on how food processing can be used to develop more nutritious and sustainable plant-based foods. Very interesting, says Jaqueline.
