Titel: The Art of Gastronomy? The role of art in understanding future meals

Art can express things that science cannot. For more than twenty years Anders Crichton-Fock has shown this in research on taste, where the most important part of a sensory experience is the hardest to put into words. In this lecture he presents the Double Grip, a method that combines analytical measurement with analogy, metaphor and memory, and the evidence that both are needed. He also shows where the method has led in practice: certification against greenwashing, wine rescued from destruction and returned to the market, and new tools for making gastronomic research accessible. The lecture includes short tasting experiences for the audience.
